I was a manager at Costco for 25 years, and even though they are a big box store all of their ancillary departments are run like a separate business, including the meat departments, the managers inspect those departments throughout the day and at the end of the night they get a final inspection and it is so clean you could eat off the floor.

My Grandpa had his own butcher shop.
He died at age 66, because he was working 14-16 hours a day, when I was 6 years old.
